Laborum de Parcela Torrontes
100% Torrontes. Limited production of 2574 bottles from block No10 in Finca el Retiro, Cafayate, Salta, planted in 1945. 95% Sandy 5% limestone
Vinification-Aging:
Manual harvest, press of whole clusters, fermentation with selected yeasts in cement eggs. 20% of the must ferments with the entire bunch. Découvage in the first third of the fermentation, pressing and continuation of the fermentation. The wine remains on its lees for 8 months in the cement egg. Mild filtering.
Suggested Serving Temperature:
Between 10ºC and 12ºC.
Suggested Food Pairings:
Ideal to pair with fatty Asian food, salmon sushi.
Color:
Light yellow with bright greenish tonalities.
Aroma:
Light aromas of fruity and fresh character, reminiscent of citrus fruits like lime and lemon, with floral notes of orange blossom, more herbal touches of anise and fennel.
Flavor:
The entrance is smooth, medium bodied with balanced almost low alcohol. Fresh, with high acidity, repeating the citrus peel of the nose. Mineral notes, with silky texture and floral finish. An aromatic white, light and fresh; modern and pungent.
