El Enemigo Chardonnay
El Enemigo (The Enemy): At the end of the journey, we remember only one battle. The one we fought against ourselves, the original enemy. The one that defined us.
Varietal Composition:
100% Chardonnay planted in Gualtallary, Tupungato 1400-1500 msn.
Aging-Vinification:
In French oak barrels of 500 lt for 12 months. 35% new. Wild yeast, Max. Temp. 18º C for 40 days.
The wine is left covered by the veil for 10 months in the old barrels. Battonage is forbidden. Nature prevails acting in silence – the winemaker has no place here.
Suggested Food Pairings:
Pork belly, grilled fish, risotto with truffle.
Tasting Notes:
Pale gold. Strong aromas of citrus, secondary tropical aromas, oaky and nutty notes.
Full bodied, mineral with high acidity and intense flavor, balanced and persistent.
Type of soil:
Calcareous, Deep Calcareous. Rocky soil
Suggested Serving Temperature:
Between 11ºC and 13ºC.
